Summer Avocado Salad

I love avocados. Unfortunately, I'm the pickiest guacamole connoisseur. I often don't like the pureed taste, but rather love the taste of chunks of avocado. I've created my favorite guacamole-like summer avocado salad and let me tell you -- guests love it!!! 


Ingredients (version 1):
2 avocados, diced
3 roma tomatoes, diced
1/2 white onion, diced very fine
1/2 lime
dash of salt


1.  Dice avocados, tomatoes, onion and place in bowl
2. Take half a lime and juice over veggie mixture
3. Add a dash of salt
4. Enjoy with tortilla chips! 




**Tip: The lime not only provides a refreshing taste, but also helps the avocado keep from becoming brown. 


Avocados are quite expensive. Just the other day I created this inexpensive version with the same idea -- chunks! The corn adds some substance and it tastes just as amazing.


Ingredients (version 2):
1 avocado
2 roma tomatoes
1 cup frozen sweet corn, thawed
1/2 white onion
1/2 lime
dash of salt
